Today, Green Mountain Coffee is featuring my recipe for Island Coconut Chicken Curry. Why yes, I did make a curry with coffee, and no, I’m not crazy!

It’s pretty common knowledge that I have a most intense relationship with my Keurig and the Green Mountain Coffee that I put in it, because I like to fancy myself as having just a little bit of Vermontitude.

Green Mountain Coffee’s Island Coconut is one of my favorite flavors, and I was so excited to develop a recipe around it. I mean, I’m not a K-Cup ambassador just for kicks. I love this stuff!
